In simple terms -- the British government imposed taxes on colonists, and the colonists didn't like it.

But it was actually a bit more complicated than that. The American colonists didn't really mind paying the taxes, what they minded was the fact that they had absolutely no say-so in how those taxes were imposed, collected, or used. They also objected to the British government imposing restrictions on what kinds of products colonists had to import and where they had to import them from. It wasn't so much the British tax on tea that led to the Boston Tea Party, it was the fact that the British forbade the colonists from growing their own tea plants and requiring them to buy tea from British companies.

And, to make matters worse, only colonists were required to pay taxes on trade goods. Those British citizens living within Britain itself were free to buy products from whomever they chose, free of special taxes.

Poor refrigeration, inadequate salt, improperly made barrels. The commonly occurring deleterious effects of a long sea voyage. And global warming. Crowded living conditions, poorly enforced labour contracts, inadequate safety inspections and Hubris.
