George and Izzy moved in with Meredith and they had a show marked "Boundaries" . The point of that episode is that they have no boundaries in that house. Izzie would walk in on George in th shower and start talking to hi like nothing was strange there. Later when George came down with syphillis, Izzy thought he was masturbating and he had to tell her he was not, but when it came time for his shot she and the other girls had him drop his pants and let them admire his behind. Throughout the whole Meredith crush Izzie was the one who told George what to do, insulting if you think about it, that he should ignore her in that manner. Now basically they have been living like a couple since the whole Meredith think blew up even though he has been sleeping with Callie and she was sleeping with Ale, letting her "Monster" loose. In the last episode he let his monster loose and she saw it. It appears she liked what she saw too.
The point of the conversation is that when Denny died she wanted to curl up in a ball and die and when his father died he wanted to feel better so he went buck wild hoping the sex would take his mind off his pain. If he had been like her she could have helped him sit shiver but she could not help him if all he wants to do is use sex to avoid his sorrows. I don't think that means doesn't want to sleep with him but given teh Meredith incident, she does not want to sleep with him and then regret it the next morning like Meredith did. When they have sex it will be because they want to love one another.
It is interesting if you ask yourself what if they had slept with each other that day, what then?

The whole episode Izzie was trying to get George to talk to her about him losing his dad instead of just having sex with Callie. Izzie was jealous he was not confiding in her since they are best friends. Izzie had been trying to keep him from Callie to force him to talk to her about it but in the end she realized he just needed to grieve his own way. That is why she said to go be with Callie since she knew that was what was best for him at that moment, and that's what good friends do.
Plus, you can read the blog on the Grey's Anatomy website, they mentioned they wanted George to grieve in an entirely different way from how Izzie grieved (the whole laying on the bathroom floor for a few days thing).

They are best friends and his dad just died. In the conversation they were having just prior to this point they talked a little bit about Izzy lying on the bathroom floor. This was after her fiancee and patient Denny Duquette had died. They were bonding over mutual loss and she was saying you have some one in your life that can make you forget for a moment, go be happy. Grab that happiness. Every minute of it is precious.

George and Izzy and Meredith lived together, so Izzy is George's friend. He helped her when her bf died and now Izzy is helping George after his father's death

Speaking of Steamy, what happened to McSteamy? I know he was in drug rehab this summer, but damn, he is looking 10 yrs older than he did last season. Is it just me or do you guys agree? He's very thin and brushes his hair funny. LOL. Also, where has Lexie been? Nevermind that, McSteamy was back in full force tonight!! Yay!

No, but they're best friends. His father just died, and she was trying to get him to grieve, but he just needed to do what would make him happy. She's just really emotional. Nothing romantic.
