I go to Vegas a lot for business and pleasure here are the places I highly recommend:
Luxor's Spa Suites
MGM Grand's Spa Suites
Ceasars Jacuzzi Rooms
Venetian hotel (overall very nice and romantic)
If you are into partying then you won't be spending that much time in your rooms so I always suggest to people going there don't spend a lot on the room because you won't be in it.
Mid-ranged hotel I suggest:
Harrahs (only for the location its mid-strip near Bellagio and Ceasars)

Of the very nice 4 star hotels, the Luxor has the most reasonable price Jacuzzi suites. The Jacuzzi in the Pyramid rooms is built up into the corner of the room and has an awesome view. These are some of my favorite rooms in all LV.Luxor also has one of the top night clubs "Ra".
Yes you could get an incredible room at the Venetian, but the Venetian is a 5 star hotel with 5 star prices. Their "V" suites are VERY nice but I doubt anyone would call the Venetian a upper middle class price hotel. They are at the top of the food chain in LV along with Caesars Palace, Bellagio, Mandalay Bay and Wynn.

You will save a fortune if you, avoid special events, large conventions and weekends. The same room at a 4 star might run $49-$59 one week and the next week that same room is $300-$400 and that's no exaggeration.
If you don't have a set date and would consider getting married around Memorial Day. May 28th until June 1st has some very good rates. Of course just like every year, the best room rates of the year in LV are in December, after the NFR(National Finals Rodeo) up until just before New Years. For 2007 that's 12/9 until the 28th, you can even find bargains on the weekends during that time(shocker for LV)

I spend quite a bit of time in LV(I go for 2 weeks at a time, 2 or 3 times a year and have for the past 20 years), so you would think I might get a little burned out on "sightseeing" hotels. But, Luxor is one that I have to check out on every trip, along with Caesars Palace and the Venetian.

Try the Signature at MGM Grand. It's a suite with a small kitchen and a jacuzzi that fits 2 people. Remember to request the suite with the strip veiw balcony. The best king size bed in Vegas. It's the newest property of MGM Grand, so suites are in a very good condition.

Congratulations on your upcoming wedding. My husband and I LOVE Las Vegas as a vacation destination and have travelled there a number of times. In fact, we got married in Las Vegas in December 2005.
On my favorite visit, we stayed at NYNY hotel in a Jacuzzi suite. The rooms are spacious, the hot tub is large and the hotel itself is fantastic. There are a lot of great restaurants and bars in the hotel. Plus, NYNY is on the corner of Tropicana and LV Blvd, so it is really easy to get to MGM (haven't stayed there yet - trying it this summer - may be a really great option) where there are a few great nightclubs.
I do not recommend Luxor. The one time we stayed there we found it to be a little on the dirty side, the rooms can be difficult to get to, and the staff is rude. Other places to avoid (IMO) are Stratosphere and Excalibur. Stratosphere is too far from the strip (and is located in what we have dubbed as "Dirty Vegas") and Excalibur is currently going through remodel - plus it is a haven for kids.
You may want to check out Paris, Harrahs, Aladdin/Planet Hollywood or Ballys. The Bellagio, Ceasars, and The Venetian may be options as well. Although the latter are typically much more expensive.
Depending on your location, you may want to see about booking your trip through www.funjet.com. They offer great flight options, rooms at nearly every hotel, and the ability to add any/all of a huge selection of attractions, transfers, and events (even weddings).
Finally, you may want to check out TripAdvisor.com. They offer some really great reviews along with photographs posted by travellers (not the typical beautiful, spacious room photos the hotels offer) along with their comments regarding their stay.
Regardless of where you stay, I'm sure you'll have a great time...after all, it's VEGAS!
