What can they actually do together? I hate this frickin' question! They can do everything any two people can do together, regardless of gender:
They can have penetrative sex (vaginal or anal, either with fingers/hands/fists or toys like strap-ons, dildos, etc.), cunnilingus (separately, or simultaneously in the '69' position), analingus, tribadism (rubbing the genitals together), humping, grinding, kissing, rubbing, licking, massaging . . .
So many people think you can't have real, passionate, satisfying sex between lesbians, and they're dead wrong. Any two people, be it two men, two women, or a man and a woman, can reach the absolute heights of passion together.
As to what's so interesting about lesbians, I don't particularly know. Based off this question, I'd suppose it was the mystery of their sex lives.

From experience, lesbian love is just like any other. When you find someone you love very much, it doesn't matter what gender they are. Imagine yourself with your significant other, your feelings, the good times and bad, that's what two women who love one another feel together.
