What is the difference between Latino/Latina and Mexican? I hear George Lopez refer to himself as both all the time. Is there a difference?

A Latino or Latina would be referring to a person's association with the Latin heritage. ie. Persons from Mexico, Spain, Puerto Rico and various other countries of Latin heritage. A Mexican would be a Latina or Latino specifically from Mexico, while you could also be a Spaniard Latina or Latino.

A Latino/Latina is someone from Latin America (an ethnicity, created when the Spanish conquistadors intermarried with the native central Americans)
