Flood with soapy water then extract, repeat as necessary. Blood is a protien and protiens get out protiens, They also can leave bacteria so you should use rubbing alcohol on the stain to kill it or you will see it return . Ever clean a spot on the carpet and see it reappear in a couple of weeks ? That is the bacteria that grows from the bottom up so you have to go deep down and get it all out.

Repeated uses of vinegar will get paint out of a carpet, so maybe it will work with blood?? However, a large amount of blood, I'm thinking notify the local authorities.

A lot of cold water and scrubbing. I removed a couple stains (in clothes and carpet) from reading this article: http://www.associatedcontent.com/article/131823/the_stain_removal_guide.html

It includes removing blood, oil, red wine, etc. Good luck!
