The phrase, "coffee housing" meaning gossipping comes from this time. It was the place to hear about anything that was going on from politics to business simply because anyone who was anyone made sure they attended the ultra fashionable coffee houses, even if they didn't actually enjoy the new brew. It was the place to be seen if you were or wanted to be anybody.

More or less the same reason as they are now, in order to
keep a clear head a place which served non-alcoholic drink seems better. Also although people must have met over meals, this may not have been the best place to do business.

coffee houses became a fad shortly after coffee was introduced to Europe. Place where they would run into a wide variety of people who might give them business.

Because coffee houses are where people always visit for meals and it's really easy to find one with comfortable facilities (especially a stranger to the town).
