Rickenbacher's have some of the best tones around. Both 4001 and 4003 models are great.
Amps? I love Mesa Boogie. I'm actually a guitar player, but I'm very familiar with bass, as well. I use a Mesa Boogie Triple Rectifier for my head and and 4x12 cab (Celestion speakers). Hughes and Kettner, Crate, Roland Warhead, and some Marshall's are also great amp brands. Each have too many good models to pick a best. It all depends on how much you want to spend and what you want your sound to sound like.
Korn? Marshall
Pantera? Roland Warhead
Static-X? Hughes and Kettner

Basses - Carvin and Lakland.
Amps - Ampeg and Aguilar.
End of story...well at least for me. I'm down with Fonzie and the Ricks, but they can be a little limiting depending on what type of music you're playing. I own all the gear above, and I've been making a living as a bassist for 20 years, so I know what gear works and what doesn't over time.
Having said this, you should buy a bass you like, and not something someone else tells you to. Find a local shop that will let you try a few out and go with what feels and sounds good to you.

My favorite brand is Fender, favorite model is the Fender Standard Precision Bass, because it looks cool, is simple, can easily be modded to make it your own personal bass and is really light :p
My favorite Amp brand is Gallien-Krueger, because they only make 100% solid state amps, and I think that's cool (I'm not a big fan of tube amps).
But remember, there is no best brand, it's all opinion ^^

An older Rickenbacher or Fender Jazz Bass if you can find one, but there are several others depending upon what kind of sound you're after. For a new bass, I'd go with a Musicman Stingray.

Rickenbacker's are great, IF you have the means! For those of us on more of a budget (!), I love Epiphone! I have a Thunderbird Reverse model, the Allen Woody signature, and an Explorer. They play great and are app. 1/4 - 1/3 the price of the Gibson T'Bird or Explorer...
I use a Behringer amp. Again, a great price for those of us who love to play but find ourselves on a budget. My Behringer gets it done and their prices are great!
