if someone is writing a movie review for homework, does each paragraph have to be 5 sentences long?

If you are doing it in proper journalistic style, no. Take a glance at the newspaper--many articles have paragraphs that are only two or three sentences long.

For a better idea of a good length, read a movie review (probably best if it's for another movie).
