Unsaturated fats are double bonded which causes "kinks" in the molecule. This gives unsaturated fats the characteristic of being a liquid form at room temperature.

Saturated fatty acids carry a full load of hydrogen molecules, so the bonds between the carbon backbone and the hydrogens are only single bonds. Unsaturated are not fully saturated with hydrogen molecules because there are double bonds in between. Therefore, saturated fat lacks double bonds.
