A Veterinarian by law can diagnose medical conditions. They can prescribe drugs. They can perform surgical procedures. Give anaesthetics. All these CAN NOT be done by a vet nurse/tech

Veterinary nurses come in different levels from a beginner to a experienced nurse who may be a veterinary technician. According to how experienced you are means how much you can and are able to do.
A
s a Vet Tech (11 yrs experience ) I do the following on a daily basis:
take and develop xrays, dispense drugs, take blood and perform pathology tests. Monitor anaesthetic. Give drugs (injection oral etc) under vets supervision/ after they have prescibed the drug. I clean and do recepetion duties. Give advise on the phone, take consultations on behaviour. I do pre consultation examinations eg get history take temp, pulse, heart rate, respiratory rate of patient. I monitor in house hospitalised patients taking temp, respiratory and heart rate, blood pressure, oxygen saturation rates.
I perform dentals (scale polish and basic removal of teeth)
I insert IV catheters and set up intraveneous fluids.
I insert urinary catheters.
I prepare for surgery (make up kits, clip and prep animals for surgery) Give patients their premeds (prescribed by vet)

There is a big difference in education and licensing for sure. Some veterinary assistants learn "on the job", some go to school for a couple of years of education and training. The veterinarian is a college graduate who has an additional four years of education and training (maybe more in internships) in a veterinary school or college.

The veterinarian is the only one allowed by law to perform surgery, to read x-rays, ultrasounds, evaluate blood work, prescribe medication, make diagnoses or referrals to other specialist veterinarians - such as oncologists, opthamologists, etc.

Veterinary assistants don't usually deal with clients at all. The veterinary assistant will do what the vet approves their doing - drawing blood, administering fluids, shaving animals in preparation for surgery, grooming, changing bandages, cleaning cages and preparing "meals" for animals staying at the clinic, monitoring animals when they come out of anesthesia.

I am assuming that you are posting from the U.S.A., from your terminology !
In the U.K. the difference is as follows:
Vererinary Surgeons are university graduates that undergo a further 6 yrs veterinary training in veterinary medicine and surgery. They are then qualified to diagnose and prescribe medication, perform operations etc.
A veterinary Nurse must have a good level of education, and then trains "on the job", with a period of time at a veterinary college. Exams must be passed before being registered. They are then qualified to undertake duties such as assisting with operations, patient aftercare, X-rays, giving injections, euthanasia, applying dressings, suturing, dental work, advising owners etc.
Veterinary assistants generally undertake admin., cleaning, feeding in-patients and cleaning.
If you are from U.S.A. , it may differ though !

The vet is the major, operating guy that does all the work pretty much. The vet's assistant just hands him stuff and helps minorly.
