If you mean characterization type characterize, give it a name and draw a mustache on it! I suggest Bready, or Toast.
Or... Bread is soft like a child, but when left alone for too long it becomes all hard and crusty. Then it doesn't taste too good as a sandwich.

If bread were a person?
Well... bread is like people in that there's more than one kind. There's the nice fluffy friendly kind, and then there's the wheat - which is nice too but a bit gruff. Garlic bread has a mean nature but is nice when you get to know it, and jalapeno bread has a bit of a temper. Rye is very sarcastic and witty, and sourdough could stand to lighten up a bit.
