You did not specify what region of the world you are talking about, so I will attempt to take a world view of your question.

Political Changes:
South American countries that declared independence from their European masters between 1804 and 1824. See citation for more information.
1810-Mexico declares its independence from Spain, which is the first of a series of wars the nation was involved in throughout the nineteenth century and into the early twentieth century.
1861-1865-The US Civil War, which resulted in a unified country made of states dependent upon a stronger Federal Government; aftermath of this war were the 13th and 14th Amendments to the Constitution
1867-The Dominion of Canada was established as part of the British Commonwealth
The Napoleanic Wars involved much of Europe during the early 1800's; France's goverment changed radically during that century. The Franco-Prussian War of the 1870s again re-wrote the map of Europe.
Japan was opened to Western influence

Cultural changes:
By and large, Europe and North America (especially the US) went from a primarily rural population to a more urban one. Industrialization led to more people working in factories than on the farm.

Economic changes:
The technological breakthroughs in the nineteenth century that were most closely linked to agricultural economics were the plow and the mechanical reaper. These machines and those that came after them freed up a lot of the labor force, and many went into manufacturing. Exploitation of the workers lead to the rise of unions. The rise of big business and corporations comes from the mid-1800s, with the railroads and later the trusts. Railroads were revolutionary in opening up markets in larger and larger areas.

Science/technology
These were the driving factors in much of what happened in this time period. The most important inventions (because of their impact upon productivity and lifestyle) would be, in my opinion:

railroads
telegraph/ and later, telephone
plow and reaper
electric light

disregard the idots below. There is nothing worse than a smug history nerd. I know you are probably looking for some help with homework or somthing so here are some things to look into. Industrial revolution, rise of nationalism, colonialism-imperialism, militarism (around WWI, WWII, and the cold war). if you like art or literature look into the Romantic era. Good luck.

Actually, historians agree: Nothing whatsoever happened or changed in the world between 1800-1920. A historical anomaly , really.
