Frank Shorter. His story is worth it.

Johnny Weismuller - Swimmer turned actor.

Babe Didrikson (Zaharias) Considered by many to be the greatest female athlete of all time.

Alfred Oerter. Won the Gold Medal for the Discus in 1956, 1960, 1964 and 1968, and in 1980, in preparation for the Olympic Games, threw the longest record EVER. (That was the year the US did not compete in the Olympics - but everyone knows Oerter would have won the gold.)

Joe D'Maggio
Gail Devers

Doctor Archibald "Moonlight" Graham (yes, he was a real person)
Dr. Benjamin Spock

And, hey, Mikey G, it wasn't Michael Jordan who has HIV, it's Magic Johnson. And he didn't overcome it, he still has it. He simply made sure to follow his medication regimen, and stay healthy.
As to overcoming physical challenges, laser eye surgery is a drop in the bucket compared to the story of Gail Devers. She had Grave's Disease and was unable to stand or walk, and the doctors told her they needed to amputate her legs.
She told them where to stick it, and went on to win an Olympic Gold Medal in Track (100 meter) at the 1992 Olympics in Barcelona.
