Difficult to say without sliiiiiightly more detail
BUT
If you have all your songs in your iTubes library then simply delete them from your library and update your iPod (by plugging it in to your USB)

If you want to keep the songs in the library, uncheck the small tickbox in the library and update the iPod. It will be off the iPod but in the library.

If you dont have access to your library - you cant do it?

as Sam said uncheck the songs you don't want on your ipod and then sync the ipod again. Never delete your songs unless you don't plan on listening to them again. Also, if you decide to delete songs, remember they only go to the recycle bin, so if you want to completely remove it from the system you have to empty the recycle bin.

Delete them from your itunes libary then go to "file" and hit "sync ipod" then wait until the "do not disconnect" sing goes away and there you ave it mate! Hope i helped!

uncheck the songs from your directory then plug your i pod into usb cable and delete
