The word Kop is an abbreviation, the full phrase being 'The Spion Kop'. This was a hill in South Africa - which during the Boer war - a battle was fought. Many British soldiers lost their lives and it became known as the 'Battle of Spion Kop'. The Spion Kop at Anfield (and other British football grounds) was named in honour of the soldiers that died there, as some of the supporters that stood on that terracing, was believed to have had died at the Battle of Spion Kop.

Also, raked terracing was a relatively new thing back then (1901-ish), and it was reckoned (in a tongue in cheek sort of way) that it resembled Spion Kop!

The first ground to have a terracing called 'Spion Kop' was Arsenal's ground at Plumton, which they abandoned when they moved to Highbury in 1913.

Can't beat Biffs answer The reason that the name Kop was used in Liverpool is that many of the British soldiers in the battle of Spion Kop (In the Boer language 'spyglass hill') were from Lancashire regiments formed in Liverpool. Its no surprise that when the large terraces or hills were built to accommodate the large number of people flocking to see football matches that these hills where called a 'Kop'
