I’d like to go out to a restaurant for dinner but am running a little low on cash. I’ve always heard a restaurant will provide a meal as long as you compensate by washing dishes for an agreed period of time.

I’m thinking of going somewhere like a Chili’s for the $9.99 trio special. I think 1.5 hours of washing dishes afterward will be fair.

Do I tell the waiter or waitress about this before or after the meal?

I don't think they would let you. First off is the liability issue and second off I've worked in a restaurant for over six years and I rarely get a free meal. If they make their employees pay then why should you get a free meal. Oh and A.L.M.O.S.T. if you do that at Red Lobster you will be arrested and prosecuted and if you don't get caught the first time don't plan on going back because they will remember you.

If you eat and don't pay YOU WILL BE ARRESTED.
You best bet is to ask the Owner or Manager, if you could do some labor and that you're starving. You need to go to the business dressed as nice and clean shaven as possible. If the owner / manager says "no". Then walk around until you find a place that will agree.
But, if you smell like you're a drunk or look drunk or act wierd, you'll get nothing.

I'd talk to the _manager_ before hand. IF the manager is creative and finds your suggestion novel they just might go for it. But remember you'd be interferring with the duties of the regular bus staff and someone else might not get paid because you are doing their job. And that person might not like that. I'd be careful when ducking out to the alley for a quick smoke if I were you...

Honestly, if you want to try and get a meal through working...talk to the manager face to face. You might be laughed at, but then again, plesantly surprised and offered a job, if you do well. Dishwashing has a high turnover, so you might have an in. Remember, you might be the dishwasher's lacky...and they might have you clean the grease traps or toilets. lol.

1.5 hours of washing dishes is WAY too generous... I say dont even offer anything at all... I mean what is the big bad judge gonna do? Throw you in the slammer for not paying your $9.99 worth of food?

actually a few places can allow this, but its not very common. by working odd jobs around the restaurant you can sometimes eat there for free... but i doubt you might find these places around the city and you may be able to this more easily if the place is owned by friends or family. don't try to pull this off after you eat! ask first. i believe major restaurant chains are forbidden to do this and require you to work there with a contract. doin this means your taking money from the employees and doing their job.

you can always ask a busboy to pay for your meal if you offer to do his dirtywork in the kitchen... i dunno if that'll work.

I think this only happens in books and movies. They are more likely to laugh or just kick you out of the restaurant. If you ask after you eat they will call the police.

Definitely afterwards in order to receive better service from the restaurant. After this happens then sell your story to a sitcom and get more mad duckets for your bad self!

In contemporary times I do not think that is possible due to tax forms like the W4 that is required for employees. You can wash my dishes and I will grill a steak for you!

Make sure that you're not entitled to any discounts first. If you bring in a 20% off coupon or something, you may get to wash 20% less dishes.
