the people in the hospitals that sit in their desks next to computers and take your insurance and make the appointments, what degree do you need to have this job, do they pay well?

Could be called either receptionist, clerk, admissions clerk, or insurance clerk. Doesn't pay well enough for when you're so busy you don't think you'll ever finish, or for the times you're bored and don't have too much to do.

Call a few doctors and hospitals to ask. Ask how much they pay their insurance clerks. They'll know what you mean. You'll also have to submit the insurance claims to the companies, and you'll need some basic math skills.

Some doctors require no degree, just the ability to be trained to do the job. Others require experience, even just a little. Some people want degrees for you to hand out tissues when someone sneezes. (Kidding on the last one, but not too far from the truth!)
