Not sure if you mean service provider or service software or what:

SNS (Secure Network Server) Mail Guard (SMG) is a highly assured multi-level secure email server that is still in use. This system is very expensive and primarily used by the military, defence contractors, and a few financial organizations.

qmail is an alternative to sendmail that has taken the OpenBSD style of security approach with lots of proactive auditing. Personally, I don't put much faith in such efforts, but it does have a good reputation and is free.

As for mail services, I wouldn't put much weight in arguments for or against yahoo, gmail, hotmail, etc... because quite frankly none of these systems have been designed with quantitative analysis in mind and even if they were, it is unlikely to find someone with sufficient knowledge of more than one (and unbiased). When using such a service, I would utilize message encryption of some form as added protection (pgp has some free stuff).

One that is entirely unknown to any person or persons that may have plans to use it against you. I use http://www.nerdshack.com/ for my e-mail. It requires absolutely no information other than what you want your account name to be and the password you want to use for it. No one that I don't trust will ever even know my e-mail address because I use www.trashmail.net to create temporary e-mail addresses that forward the messages they get to my nerdshack e-mail account. If every place that could potentially send me spam or add my e-mail to some sort of database for future use has an e-mail address that will only exist for a couple weeks then they've got nothing.
