Fantasmic is at MGM Studios not Epcot, and it is in an amphitheater so you need to go inside to see the show. They do have two main concession stands along the back, one when you make it to the top of the hill, a few vendor carts, and and a few vendors walking around with drinks, cotton candy, and popcorn. You are also allowed to bring in outside food and drink into the show as well.
Epcot's show is IllumiNations: Reflections of Earth.

Fantasmic is a live show at the Disney Studios. It has live actors, fireworks, music, fire and projections on "water screens". It is set in an arena with stadium type seating (benches). There are no restaurants at the show. There are restaurant at the Studios that offer reserved seating at the show coupled with a meal. There is usually one or sometimes two shows (busy season).
Epcot's show is called IllumiNations: Reflections of Earth. It features fireworks with music, fire, fountains and a globe that floats across the water. The globe is the world's first spherical video display system. The 13 minute show takes place in the World Showcase Lagoon.

The lagoon has many restaurants along the shore. I recommend eating at "United Kingdom" - The Rose and Crown Pub. There is an outdoor dining area that overlooks the lagoon. You will need what Disney calls "Advance Reservations". See: http://www.allearsnet.com/din/dining.htm for help in this. The time slot goes fast and with many people getting the dining plan, ALL dining reservations can be difficult to get at the time you want. Most dining reservations can be made 180 out from the day you arrive. The show usually goes off at 9:00 p.m. so I recommend you make the reservations at around 8:00 p.m. They didn't guarantee outside seating that last time I did this but we did get to sit outside - it's just not guaranteed.

Actually Fantasmic is in MGM, not Epcot. Epcot does have a laser and light show I do believe but I dont know where the best place for you to view it would be.

Make dining reservations at the Rose & Crown at the United Kingdom Pavilion. They have a few priority seating tables which are outside and have spectacular views of the lake for Illuminations (my favorite Disney night show)!
You can make dining reservations up to 180 days in advance by calling 407-WDW-DINE.

Mexico Pavilion's casual dining location, La Cantina De San Angel, is also a great place to enjoy the show from and enjoy a meal. But be sure to make those reservations in advance and ask to be seated by the water. Also, bring mosquito spray if you'll be there in the summer.

Norway is also an excellent spot. But eat beforehand and head over to Norway's bakery for dessert. I love their chocolate and custard fruit tarts. Grab a dessert and pick out a table in their outdoor eating area. You'll be able to enjoy your dessert and see the show!

I think Mexico and United Kingdom are the only countries with outdoor terraces, another option is the lounge in the Japan pavillion 2nd level, next to the steakhouse. It overlooks the lake. If you opt for outdoors, be sure to factor in the wind direction, and dont stand downwind of the fireworks(lots of smoke).

The Italian restaurant, Alfredo's, also offers outside dining. The food is fantastic and you'd have a good view of the fireworks.
