First, you are going to be working with gloves...I hope. So, no need to touch it. Second, get a sharp scalpel. The center of the sternum (chest) is very hard to cut so carefully pry back and forth until it breaks. Remember, this can be done with a mask if you want. Imagine this is just a plastic model. Dab with cotton swab to keep moisture down, so you can see what you are doing.
Have someone dab your head with cool cloth and work with someone who can keep your confidence up. Doctors use the cool or dry cloth to wipe sweat in surgery all the time. Imagine you are that serious surgeon making someone's life better.
Look up at everyone else doing the same thing you are. If you become stressed...look toward a light or window and take three normal breaths and continue with courage.
It is worth the grade to do your best.
Your instructor knows it is your first time. He or she had a first time as well.

Check that the frog you are going to cut open is really dead!
The first time we had to dissect a frog during anatomy classes at University, we were told that frogs had been killed with chloroform and kept at -20C overnight. The day after we cut our frog and noticed the heart was still beating, but the teacher said it was a simple "reflex". Except that there were a few "frozen" frogs left and we took some of them home and kept them in the fridge. The day after they were alive and well and looking at us with a quizzical face.
This is when I decided to become a Biochemist.....
