The veggies themselves are the same. It is how they are raised that is the difference. Organic veggies have no synthetic chemicals and fertilizers on them.

Organic = healthier for the environment
healthier for the farm workers
unfortunately, often less healthy on the wallet ($$$)
may have more vitamins and protein
will not have strange chemicals coating the peel/rind
may taste better

One of my friends lamented that she used to love Red Delicious apples but "now the flavor's not the same, the flavor's just gone."
I brought her an organic apple and said "just trust me and taste it." Her eyes got so big when she bit into it! It had the wonderful flavor she remembered. Instant convert.

organic veggies (grown without pesticides or synthetic fertilizers) are proven to be more nutritious, and in many opinions taste a lot better.

non organic veggies (grown with pesticides and/or synthetic fertilizers) grow faster, and therefore do not take up as many nutrients as organic veggies, - also do not develop as mature of taste.
