Some models look best in white (Subaru Legacy...all years, but especially the first generation).
Some models look good in white, if better in other colors (Evo).
White is easy to keep looking clean. Mud and whatnot shows on it easily, but the slow, even accumulation of grime does not. This is largely because you can't usually see reflections on white cars unless you're up close, so there is nothing for the dirt to interfere with. (Contrast this with black cars...which many one-time owners insist they will never own another one)
White reflects more heat than most colors. You can run your AC less (saves fuel) and the car never gets hot to the touch. (Contrast this with black cars, which you don't want to even lay your hands on anyplace sunny.)
White paint fades less than other colors (especially red), so if you have body work done, the paint will likely remain matched over time. Body work on some cars can become more apparent as sections colors fade at different rates.
The disadvantages:
Against a white backdrop, white cars can be less visible. This is only rarely a problem, and only in places that get a lot of snow.
It is very easy to notice color differences between shades and hues of white, so it is difficult to match colors so the eye can't detect it. So you'll see a fair number of white cars with mismatched patches and panels.
In practical terms, white is the best color. Its advantages far outweigh its disadvantages.

The heat-reflecting qualities of white paintwork have always been appreciated by drivers in hot countries. White bodywork can look very smart with extras such as a hardtop fitted with smoked glass. Now, specialty paint finishes are designed to enhance white by giving it a pearlescent effect or even a hint of gold. Pretty!

Easy to see, cheaper to paint and repaint, takes graphics well, and generally makes a lot of sense, if you are in business.
For private citizens driving white cars, check for "turkey neck". They are frequently retirees who spent their careers driving company cars.
