Yeah, goat is nice. Try mutton or neck of lamb as alternatives too. Be aware that they all need a long slow cook though.

If you want to spice up the rice too, try adding some cow peas(boil them for at least an hr and add the uncooked rice to them-lots of water requ'd) and creamed coconut-the rice goes a reddish colour cos of the pea colour and the coconut in the water adds sweetness. Yum!!

Goat is pretty good, so is mutton or lamb. It does depend what type of curry you are making though. Stay away form chicken until you fell you are pretty good at cooking. You don't want chicken curry bottom gravy

you are right goat or lamb, it gives the curry a better flavour and the meat is tender and takes on the spices really well......

Lamb is really good. Marinate it in curry paste then cook very slowly to tenderise

Your best bet is chicken. Chicken goes with every spice known to man. There are so many variations to the way you can prepare chicken. Tandoori is especially nice.

Definately chicken, you cant beat chicken korma or madras, but you can use it with pretty much any curry!
