u do not need a visa to change flights.
if u have a stay of over approx 8 hrs u should be provided with hotel accomodation by the airline. or else u stay in the transit launge of the airport where visa is not required.
if u want to visit dubai in ur spare time or have any friends here then u can ask the airline to sponser a 24 or 48 hr visa so u can go out and visit the city around this time .

Holders of British overseas passports issued in Hong Kong or China can obtain a visa on arrival at Dubai Airport.

You will definitely need a transit visa.It cost a little and it's easier and quicker to get.I flew from Accra-Ghana through Amsterdam and finally to Houston and i acquired transit visa for Amsterdam even though i was spending less than 5hrs in Amsterdam.Changing flight is the same as transiting so you will require a transit visa because your flight ticket has China-Dubai- and then your final destination so the immigration people at the airport will make sure you have visas for countries you will make transit in .
Go to the United Arab Emirate's embassy to file for transit visa application,they will require a passport picture(you will be given the measurement),your plane ticket,passport with visa for your final destination and a little fee for processing.Processing of transit visa takes less than a week.
The fee is based on the number of entries (single or multiple).
So far as you are not going by direct flight,you will need a transit visa for Dubai.Go get one else you will be disappointed.UAE does not exempt China from visa for entry.
