WWE Championship: John Cena vs. Ric Flair
I know right now you must think I'm crazy, but my idea would have this be Flair's last hurrah, win, lose, or draw. Follow kind of a "Rocky Balboa" storyline and barely lose to Cena (while still putting him over, as Flair does so well) then have Flair become a manager or announcer or some other non-wrestling performer.
WHC: Batista vs. Undertaker
Honestly, this isn't what I'd do, as I think Taker should put someone over on his way out, but with Batista's age and history of injuries I wouldn't be banking on him in the long run. Right now I think Taker should win though, and maybe hang around for a more worth succesor next Mania.
Rated RKO vs. Shawn Michaels and a Mystery Opponent
WWE will likely get at least one of the following back for a Mania match: Foley, Hogan, Austin, Jericho, etc.
Note: I'll continue in details, so wait for it if you want.

All of those guys have history either with Micheals or Rated RKO or both. I'd mention the possibilty of all four though, so that way fans will want to see who it is, but at the same time not have to worry about it being some lamer :p
ECW Title match: Bobby Lashley vs. RVD
Really, there isn't much they can do that they haven't done to death on the ECW side of things, but RVD is their most over star. And he should win.
Hardy Boys vs. MNM: TLC Match
Time to finish this feud in the most spectacular fashion possible. I'd actually give MNM the win, as the Hardys have dominated the feud to this point.
Tommy Dreamer, Balls Mahoney, Sandman, and Sabu vs. Elijah Burke, Marcus Cor Von, Matt Striker, and C.M. Punk
ECW Originals vs. the New Breed is an obvious conflict. What would be interesting is Punk's role. I'd have him try and get in with the originals, but have them reject him as he's not really one of them.

I'd then have him decide that he needs a match at Mania (he's addicted to competition after all) forcing him to side with guys he might not be too fond of.
Money in the Bank Ladder Match: Chris Benoit vs Booker T vs Fit Finlay vs Kane Test vs Hardcore Holly vs Carlito vs. Super Crazy
Just something for some mid-carders to do, but in an exciting manner. I'd have Benoit win.
Brian Kendrick, Paul London, and Cryme Tyme vs. The World's Greatest Tag Team and Cade and Murdoch.
This would be a fun, short match to open the show that would spotlight some of the tag teams.
