have you tried adjusting the equalizer settings? for more bass, use the bass booster setting.

I had the same problem, but I was able to (mostly) fix it. I still use featherweight headphones (over-the-ear type, not earbuds), so I knew I was pretty much limiting my ability to get boosted bass, but even when I was playing it through my portable stereo it sounded tinny and many CDs (especially of older albums, like The Beatles) were really quiet when played with the line level volume. So, here's what I did to fix it:
Step 1 - Download MP3Gain with the AACGain add-on (website listed in the Sources section). Install it as directed by the website, and use it to level out the volume levels of your tracks. I suggest finding the CD that has an overall volume level that comes closest to what you like. Load that folder by itself into MP3Gain and do an Album Analysis. This is the level you should be shooting for with the rest of your albums, so note the average dB level and change that value in the upper left corner, right above where the tracks are displayed. Now, load your album folders one at a time into this, and do an Album Gain to shift their average volume to match the first CD.
Step 2 - Open your music library and Select All (CTRL-A, or use the Edit menu). Right click on the highlighted tunes and select Get Info. Click "Yes" if it asks you for confirmation. Now, in the lower right, there is a list of basic EQ options. You'll want to set everything to Deep, Bass Booster, Small Speakers, or some other option that will intensify the bass and drop the treble (to see exactly how it's changing things, pull down the View menu, select Show Equalizer, and check each preset EQ level to see what you're getting in the iPod).
Step 3 - Before closing this window, you'll also want to crank the volume adjuster all the way to +100%. Theoretically, this is supposed to allow you to even out the different volume levels of your various CDs, but you already took care of that in Step 1. Close the window, and you're all set. Just remember to resync your iPod for it to take effect.
Step 4 - Get better headphones. Seriously. The earbuds that come with iPods pretty much define the word "suck", and the only point in actually using them is to let everyone know that you own an iPod (in some places, this could be interpreted as "Please steal my iPod"). Getting a better set of headphones will give you better sound. Now, granted, I generally use RCA HP285 headphones, which have a rubber loop that wraps around your ear to secure them (you barely feel them on your ears, but they don't immediately begin to pop out of my ear canals as soon as I let go of them like the half dozen or more types of earbuds I tried when they first hit the market), so I'm not exactly the person to tell you which headphones will give you the best sound, but I do know it's not the original earbuds.

Perhaps its your earphones. Crappy earphones can make even the ipod sound awful. The ones I have from apple are much better than a set of $6.00 generics I bought in a discount store.

iTunes has the ability to limit the max volume of iPod's...maybe this has happened. Try connecting to PC and firing up iTunes and looking for Volume Limiter or something similar.
