Try these:
Artemis Fowl by Eoin Colfer - criminal genius
The Chronicles of Narnia by C.S. Lewis- a world of talking animals
The Hobbit and The Lord of the Rings by J.R.R. Tolkein - practically the best fantasy novels ever written!!
Fly By Night (I forgot the author) - tagline is: "Imagine a world where books are banned!"
Knights of the Silver Dragon by Ree Soesbee - funny adventure with a thief, an apprentice wizard and a boy
The Thief Lord by Cornelia Funke- okay, so it's not set in a fantasy world, but there are "magical" elements to it
Peter and the Star-Catchers (I forgot the authors) - trust me, it's not that childish!
Troll Fell by Katherine Langrish - although I haven't read it yet, I think it's pretty good. :)

Piers Anthony's books might be a bit too sexual for parents' comfort zones.
Robert Asprin's "Myth" series is a good one for teenage readers. Start with "Another Fine Myth." If sci-fi is any interest, Asprin's "Phule's Company" and "Time Scout" (co-authored by Linda Evans) are wonderful.
Brian Jaques' "Redwall" series is a good one if they haven't read the series, but it might be a little more juvenile than he would like.
J.R.R. Tolkien's "Lord Of The Rings" series is a great one for teens to read.
Roger Zelazny's "Nine Princes In Amber" is the start of a good series.
Great sci-fi titles:
"The Moon Is A Harsh Mistress", "Stranger In A Strange Land", and "Friday" by Robert Heinlein.
Orson Scott Card's "Ender's Game"
The "Dune" series by Frank Herbert
"The Stainless Steel Rat" series by Harry Harrison
Lois McMasters-Bujould's Vorkorsigan series "Shards Of Honor" is a good starting point.

Check out The Chronicles of Prydain. It is a five-volume series of children's fantasy novels by author Lloyd Alexander. The stories detail the adventures of a young man named Taran, who is awarded the honorific of Assistant Pig-Keeper but dreams of being a grand hero, and his companions Princess Eilonwy, Fflewddur Fflam the wandering bard and king, a hairy yet gentle creature called Gurgi, and a diminuitive dwarf named Doli.

There have been some awesome answers so far. I greatly encourage you to check out Anne McCaffrey's series of books about Pern. Piers Anthony's books about Xanth are another great series. Those should hold your interest until the next book in the Inheritance trilogy comes out! (I can hardly wait for that one myself!)
