A lot of the works of John Keats and Coleridge. Shakespeare's A Mid Summer Nights Dream and The Taming of the Shrew, Rebecca ("Last night I dreamt I went to Mandalay..."), The Little Prince by Antoine de Saint-Exupery, Green Monkey Dreams by Isabelle Carmody, and thats all I can think of right now...

Ursula K Le Guin's Lathe of Heaven. Her main character, George Orr alters reality through his dreams.
Another set of reading, if you like graphic novels, is the Sandman series by Neil Gaiman. To me, they're as rich as any well written novel.

The Stand-Stephen King.
Cell-Stephen King.
The Stand, in my opinion, is the better of the two.
