Bacteria grows in the milk and produces acid which causes the pH to turn south (sour). Usually this process in optinum at room temperature.
Keeping milk in fridges slows the process, but if left too long, the same will occur.

I took a big swig out of one of those little cartons in elementary school. Due to childhood ignorance, sniffing was an unknown detection method. I managed to keep down that first swallow, but it turned me off of milk for years.

Check the expiration date, and smell before you drink a couple days before that date. then you won't drink cheese curd.
