Lets say the temperature is 55 F on monday and tuesday but on monday the humidity is 80 and on tuesday the humidity is 30 which day will form the most condensation?

Neither will condense at all if the temperature remains constant the entire time. Condensation occurs when air is beyond saturated with water, meaning when air cannot hold any more water. This only happens if the humidity is at 100% or above. If it is above, then all the water down to 100% humidity condenses out. At 80% and 30% humidity, the air has no problem holding all the water in it. Now, the lower the temperature, the less water the air can hold. So if water is at 80% humidity on Monday, but Tuesday the temperature drops so that the humidity becomes 120%, then that extra 20% will condense out.

The 80 percent humidity. Condensation occurs when the air is saturated with water (at 100% humidity) and cannot hold some moisture. That moisture that can't be held is the condensed as dew. So the higher the humidity, the higher condensation.
