This is how it was used ---- If there were no salt added to the ice, it would melt at 32 degrees Fahrenheit and eventually the ice water and mix would come to equilibrium at 32 degrees.

Equilibrium simply means a sense of balance. In this case it probably refers to the fact that the water and ice will no longer react with each other by means of transferring properties. For example the ice would melt in the water and at equilibrium , no further changes would occur like transferring of heat from the water to the ice. The solution has found its balance.
Another type of equilibrium is the point at which a reaction can occur through reversible processes and occur at the same rate. This is called Dynamic equilibrium

Equilibrium comes from the Latin aequus (meaning equal) and libra (meaning balance).
It simply means that all parts are basically equal to each other, balanced with each other.
In your example, eventually all the ice and water would be at one temperature throughout the sample.

Think of one of those old scales where you put something on one pan, then known weights on the other pan until the whole thing is balanced.
When the weights are equal, the scale is in "equilibrium".
