The German invasion of Poland in September of 1939 was the start of the war in Europe.

However, the actual start of the war began in later part of June 1937, two years earlier with the Marco Polo Bridge Incident. China and Japan had already been fighting the war for two years previous to Hitler's invasion. This event is often over looked by historians as World War Two historiography generally focuses on the events of Europe. Though the European powers were very much involved in providign supplies to both China and Japan.

Here is the link to wikipedia article which is rather good:

The simple answer is: Germany invaded Poland. But a more complicated answer would be that World War II happened as a direct result of the treaty that ended World War I. In the Treaty of Versaille, Germany was penalized so severely that there was little chance of them recovering. They were at a low point in pride for their country and would listen to anyone who would give them hope, find someone to blame (the Jews) and make them feel good about themselves again. Along came Hitler to fill that need....

Depends on whom you talk to. If you hold with some, the invasion of Poland in 1939. If you want to go to the real beginning, it would be the Invasion of Manchuria by the Japanese in , I believe, 1937.
