When you get here, check the local papers (Sun Times, Tribune, Chicago Reader, New City, Time out Chicago) and find out where the street fairs are. That's the best way to get a feel for the REAL Chicago. Everyone goes to the usual sights (Sears Tower, Millenium Park, museums, blah blah blah), but street fairs are how Chicago parties in the summertime. There's good food, music, beer, and you get to see real Chicago neighborhoods and not the touristy stuff. And depending when you get here in the summertime, they may be a City-sponsored festival going on like Taste of Chicago, Blues Fest, jazz fest, etc. All of the city fests are free; the neighborhood festivals may charge $5 at most.

The shopping in Chicago is fabulous restaurants are top notch. It can get pretty muggy in Chicago in the summer so I recommend light weight airy clothes for walking.
Here are a few good sites to check out that will give you some info..

There is great local theatre in Chicago so I would definately recommend going to a show.
Rockit Bar and Grill on W. Hubbard has great drinks and a cute little patio to enjoy the outdoors in summer.
If you like French food romantic quiet atmosphere then try Brasserie Jo also on W. Hubbard.
And of course you have to have some chicago deep dish pizza
Pizzaria Uno or Pizzaria Due on Wabash my fav.
Good Italian Scoozi on Huron great wine selection
Head into Greek Town for some fabulous authentic food.
Shopping definately go to Water Tower
Hit Millenium Park and Navy Pier
The Art Institute of Chicago on Michigan
The Field Museum on Lakeshore
No matter how many days you are going to be there I promise you won't have time to do it all.
Have a great trip!

Definitely take her shopping at Water Tower Plaza, arrange a dinner cruise on one of the luxury yachts on Lake Michigan, hit the Sears' Tower, "Gangland" where Al Capone hung out...there's a plaque on the street corner where he was shot and killed, get some awesome gyros in Greek Town, stuffed pizza at Gino's, Eduardo's, or Pizzeria Uno, (or Pizzeria Due, across the street! :P ) Cub's game at Wrigley or White Sox at Comiskey, I could go on and on....
OH, and don't miss the chance to kiss her atop the big ferris wheel on Navy Pier! Have fun and tell Chi-town I said hello!
