this reciped states "MAKE AHEAD The dip can be refrigerated for up to 8 hours."

"up to 8 hours" this implies its bad after being in the fridge for 8 hours....that seems silly...anyone know a valid reason why this would be true?

What they should have said was "Best if eaten within 8 hours" but it would not go BAD....

If you cut up celery sticks more than 8 hours before eating them, they would be fine, but the ends might start to turn slightly brown.

Just don't do it TWO WEEKS before you need them. Something would start GROWING.

Of course, you are getting an answer from a Computer guy and not a CHEF. Next time post a Food Question in the "Food & Drink" section.

They are most like been a little on the safe side. It most like at it best quality up or until 8 hours. I think it should still safe after 9 but you have to draw a line some where. And with a sue happy society they trying to protect themselves.
After 2 day you should throw it out.

The only thing that I can think of is that is a guideline so that you know that you have up to 8 hours of freshness for the dip. I doubt that it means it is going bad, it just won't taste as good.

Mayo loses its whipped quality after a while and becomes an unattractive greasy substance. also the eggplant juice might float to the top an make it look runny. I don't think it will go bad, it just won't look fresh.

because it goes bad yoiu need to eat it after 8 hours or it tastes bad

it may be the mayonnaise - have you ever put tuna fish mixed with mayo in the fridge - it gets nasty after a while
