If you don't like stamps but still want something philatelic, you can collect covers (i.e., envelopes). You can try and collect an envelope postmarked with every day of the year, or try and collect one with each postcode or one from each country in the world. Or you can collect first day covers (although the main point about them is the stamp).
Otherwise, I can recommend Pokemon cards!

I don't have the space yet, but someday I want to collect old radios or old reel to reel movie projectors. I've seen these in decorating magazines and catalogs; they look great.
On a smaller scale, I have collected unusual ornaments from foreign countries, jewelry pins, bracelets.
My dad collected stamps & coins. My friend collects "antique" dishes.
Many people collect special memorabilia from early days of California, places they have or wish they could visit, like Hawaii, foreign countries...
I'll bet there are websites dedicated to "collecting" or on most popular collecting.

My friend collects tea cups, she gets them on her trips she takes and some are rare. Some are fine china pieces and are exquisite.
Or maybe old cameras, perfume bottles, jewelry, art, old instruments, old books like poetry or music, glassware, old postcards, etc.
There are many things to collect, but be careful and think it through before you begin. Some items take up a lot of room and if space is an issue try something that is small.

Seriously, you must be kidding. :o) You can collect ANYTHING. Anywhere you look, there's stuff to collect. It depends what is the reason for your collecting - do you want it for investment or just for fun.
Some examples of collecting from my personal life (friends and such)
Muppet toys/dolls
Barbies
bookmarks
tin cans (great to use in the kitchen as containers)
books (can be one subject or one author)
vinyl records
any country's native art
postcards from places you've visited (if you travel)
old cameras
jewellery
original art (do you have friends who are artsy)
paper dolls
You can collect stuff you find online, on your computer - like photos of something you particularly like... say you like sunsets, you can find fantastic sunset photos online, and make that your collection.
This really can go on and on...

You can collect coins. If you go for world coins they are inexpensive and some are historic. Try getting one from every country. There is even a club by that name. With U.S. coins start a set out of change, of any of the denominations. See a coin dealer for help. If he does, then he is worth going back too. get a coin magazine like Coinage or Coins and see if the coin hobby interests you. Maybe you may like medals or tokens or city medals and tokens from your state or country.

Beautiful glass perfume bottles. Not the kind that already have perfume in them like you get from a department store, but the decorative ones. You could collect them when you travel.

Well, my collections include magnets (mostly from places I've visited), Nativity items, Mothers and children pictures/items, and outdoor flags. Find something you like and get going.
