Is there a hard and fast rule? No. Most time when a body is poopy, pissy, or both, it's because of a rather violent action caused the death. Car wreck, that pogo stick off the empire state building, or any sudden impact or stop.
Other times would be when death includes a sudden muscle flexing as with heart attack or other medical condition that would include a sudden flexing of your muscles.
A calm peaceful death isn't likely to include bowel or bladder release.

Like everyone else is saying, I'm pretty sure it's because your muscles relax and no longer hold in your waste.
I've also heard from friends that if you die standing up, (however you do that) or lying down, (although I doubt it) you get an erection. Obviously it is because all the blood flows down south.
This woman I know works with dead people and when she touches their chest, she hears their "last" breathe. (i.e. breathing out)

YES, that is absolutely true. Once you are dead, the nerves that control your bowels no longer function. Therefore, you excrete solid waste, or what you c all poop.
