I take it it is not a hold up but a clandestine affair. In which case it is Friday for it is likely to come to light only on the next working day and they can enough time to plan their getaway.It is presumed Sat and Sundays are off days for the bank.

I would think Thursday after the armored car drop off of cash in anticipation of the need for cash on Friday.
