My recommendation would be Libba Bray's "The Great & Terrible Beauty" and "Rebel Angels", quite unusual in concept and written in 1st person present tense which is very different.
Pullman: excellent (my daughter likes him a lot)
Eddings: personally (from a professional viewpoint -- I'm a writer) I think his stuff is rubbish ... but lots of people like him.
McCaffrey: Definitely: The Ship Who Sang is magical (even though it's SF), the Pern books are good up to All the Weyrs of Pern, I don't recommend them after that.
Someone mentioned Stephen Donaldson: The Thomas Covenant books are very powerful, as are the two Mirror of her Dreams books. Not for under 15s though, so your friend will be fine.
Colfer's Artemis Fowl books would probably be too young for her. They are fun though.
Zelazny's Amber books -- the first series of 6 are the best. Easy read, clever and unusual fantasy.
Mercedes Lackey: I haven't read her books but have heard good things of them. Likewise Robin Hobb.
Jordan's Wheel of Time, again I've not read, but I've heard very bad things of them. But they are popular.
Ah, now, someone said Mists of Avalon by Marion Zimmer Bradley -- I preferred Firebrand. But both are excellent, each is a "feminist" take on traditional stories the Arthur legend for the former and Cassandra in the second. Absolutely brilliant.
Oh yes and Piers Anthony, the Xanth books are fun and very silly (loads of them starting with A Spell for Chameleon), then there are the Incarnations of Immortality books: On a Pale Horse, With a Tangled Skein, Being an Earth Mother, ... and the others (can't recall the titles). Very clever, very interesting fantasy, I like them a lot.
And to the person who mentioned Frank Herbert's Dune series, yes but only the first three: Dune, Dune Messiah and Children of Dune. Technically these are SF (like McCaffrey's Pern books) but they read like fantasy.
Phew. That should keep her going.

How about "The Mists of Avalon"? I loved that book myself. It's the story of the women of the Arthur saga, and some of the traditional "bad" people are "good" in this version. It's very affirming of women and magic. There are others in the series if she finds she likes it. I love Piers Anthony's "Incarnations of Immortality" series. The first in the series is "On a Pale Horse". If she likes philosophy, she might like it. It really makes you think about the powers of life and death, good and evil. He's written many other great books as well. A huge favorite of mine is Frank Herbert's Dune series, and it's more relevant than ever today.

Try the Wheel of Time Series - Robert Jordan. There have been 11 books published so far and a prequel. A great read...Although it is fantasy, it doesnt follow the usual kiddy storyline...very suitable for the young adult

I recommend His dark materials By Phillip Pullman, They are brilliant, It is well explained and a fairly easy read but still a brilliantly written fantasy adventure
