The answer goes back to seafarin` days.The fried dough treat
started aboard ship.To make it more convenient to eat for the helmsman,the hole was added so he could use the wheel to hold the donut.

So the inside will get done at the same time as the outsides and some Bakeries string several donuts on a rod and drop them in the shortening and retrieve them all at once.

Without it, there'd be no doughnut holes.
