Actually I know this. It was on the History Channel some time this last week on a show about sweets. It started because when sailors were guiding their ship they didn't have a place to put the pastry they were eating so they would just stick it on the wheel and it would put a hole in the middle of it and that is where the donut hole craze started. Pretty neat. YAY! TV taught me something!

It makes it hold it's shape better when frying. Without the hole it would end up round like a ball, and wouldn't cook well in the center.
