Different types of oil used in saponification can cause varying hardness in the soap. Why is this so?

Different oils are composed of different combinations of fatty acids. The longer and the more saturated the fatty acids in the oil are, the harder the soap will be. Shorter and more unsaturated fatty acids in the oil will produce a softer soap.
