A WASP is a White AngloSaxon Protestant. It's basically an insult implying that WASP's are all alcoholics. Which is funny, since there are several protestant denominations that prohibit alcohol whatsoever.

It's just a stereotype. the Irish are stereotyped for their drinking behavior. Churchill always had a brandy in one hand. You probably heard just a cliche ridden comment to make the script come alive.
