You could mean one of two things:
you put it in neutral and kick the kick start until it starts, or
you turn the handle bars to the right if you want to go right and left if you want to go left.

I'm gonna assume you mean changing direction whilst riding?
Shift your bum on the seat to the opposite side to the way you want to go i.e. if you are going to the right move your bum to the left. You want ideally one cheek on & one off the seat. Take your foot off the peg on the side which will be the inside of the turn (ie right leg for right turn) . Straighten your leg & move it forwards & out from the bike.
The idea is that if the bike starts to slide out from under you, you can push it back up with this leg to regain control. Lean the bike into the turn (use a bit of countersteering if you are confident) & there you go....
Take a look at the rider in this picture, note the seating position & the dangling leg. Thats all there really is to it.

My only other advice is try & ride on wet dirt rather than dry as it's less painfull when you fall off (& you will)
I did a day at an off road school & would recommend it to anyone, well worth the money & top fun.

Turn on the gas, usually on the left side of the bike under the tank, make sure the kill switch isn't off. You can find the kill switch next to the throttle. Turn the throttle a little, pull in the clutch lever on the left handlebar grip, kick the starter or if it is a pushbutton, then push the button, give it some gas and slowly let out on the clutch and go go go.

I agree that your question is open to more than one interpretation.
Starting it depends on the model, year, 2 stroke, 4 stroke, size, etc. a lot of variables. Get someone with experience near you to actually show and coach you through it.
If you are refering to actually turning, agian there are many different ways of turning a bike.It is not as simple as turning a bicycle as earlier stated. A lot depends on the type of turn, are you in sand, gravel, hard pack, flat track, bumpy, banked, on a hill, etc. Again, I suggest that you find someone in your area that has the experience in what you want to learn to coach you. Be sure to wear the appropriate safety equipment. Start out slow, and enjoy.

DOH - disregard first answer. check the petcock, turns the fuel on. Make sure it has gas, make sure it's in neutral (green light on), may require the side stand up.
