I find it very difficult to balance. I've been trying for 10 minutes and the potato keeps sinking.

Am I doing something wrong?

No. You should also have some Jameson's 16 year old or any other fine Irish whiskey after the appetizer , Guiness, and top it off with Irish cream liquer, dairy products are important too.
