I'd go with some sort of bean. They can simply be planted and allowed to go.

Kudzu grows fast (sometimes several inches in a day), but only until its root stores run out. Then the plant will simply stop in its tracks until the roots can rest up and rejuvenate, and grow (which happens over the winter when the plant appears to be dormant). However if you dig up a small tuber (perhaps 6-12 inches in length) attached to at least one woody vine with a leaf joint, you should get some rapid growth for a month or so. Just be sure to keep the plant healthy, as once it stops growing, that's it until frost.

Buy paperwhite bulbs (3-5), place in a decorative bowl or vase,I used a cubed/square vase; point side up...fill water to the bottoms of the bulbs and place in sunny spot. Keep water at the same level and you will have green shoots within days, and tall leaves and flowers within 3 weeks! Use container you have laying around, bulbs at Walmart or the like less than $5.
