You typically see something sugary/cinnamony as dessert at Mexican/TexMex places. Easy ones would be something like churros, or sopapillas (sp?!). These can be made somewhat in advance, though fresh out of the fryer is best, I admit. Sopapillas are good because they're puffy light (really, they're just a light fried dough/donut), won't make you barfy full after stuffing yourself at the taco bar. Your guests can dress them up with honey or chocolate syrup or ice cream. Have some chopped nuts (almonds) alongside for sprinkling on top.

Flan (although that's Cuban, not Mexican). Fried tortillas sprinkled with cinamon. Look up some web pages that have Mexican cuisine. They probably have some dessert recipes that would go with the taco bar theme.

well, why not choco tacos? they are the bomb! if you have never had one, it is waffle cone, shapped as a hard shelled taco, and then there is ice cream in the middle, and there is cholcolate drizzled on it. they taste like one of those cones that you get at the store, witht he peanuts and everything, and that is how you get them, but you could unwrap them, and put them on plates, and serve it with like sone chocolate chips on the plate, dress it up.

When I make mexican food I make chocolate pecan pie and add cinnamon and cayenne pepper to make it pop. Also, flan is traditional.
