Japanese shows typically tell the story and finish, they usually don't keep stretching out over unlimited episodes that don't tie well together.
Typically shows are designed to tell a story arc in 1-2 seasons (13 or 26 episodes) then they are done. If there is a big enough draw, a second season could start. If its a mega franchise, say One Piece, Bleach, or something with many volumes of manga, it can go much longer.
Bleach for example is an interesting show in that when they were making the show at the same time catching up with the manga that was still being created. The show blew thru all available manga, then had to go off on its own arc while the manga still came out along another arc, when they get enough of the manga completed to lead the story, it will go back to the manga storyline.

It would make lots of sense that they went off the air. They dont last forever. Unless you mean the ones that got booted off without getting to the end of it. Then yes, ive seen that happen. Probally the only anime that i hated to see go while it was about to get even better, would be Rave Master.
