I assume you are talking about the short-tailed weasel, or ermine. The change in coat colour offers them protection against predators. During the summer months, the brown coat offers them protective camouflage against the brown background of their mostly forested home.
In winter, the white coat allows them to blend in perfectly with the snow.
Many other animals would love to make a meal out of weasels, things like owls, hawks, foxes, coyotes, wolves, cougars, other larger weasels.....and the list goes on.
So they change colours to better avoid these dangers.

Wouldn't you wear different colors if you wanted to conceal yourself in snow and also conceal yourself in green vegetation?
