The other option would be 5 + 5 + 5 ≠ 500, but then it isn't really an equation any more

It should have been 550, not 500.

5+5x5 would give you 500, having changed only one charactor. However, BODMAS requires that you insert brackets:
(5+5) x 5 = 500
